Beet- Pumpkin Cake Ayurvedic Style

 

Sometime in January, I attended Ayurvedic Cooking Class. One of my takeaways from the course was beet-pumpkin gravy.  I loved the texture as well as the color it renders to any gravy dish. However, it did not go down well with my Darling Husband and Daughter Delight.  I had one bowl of this Beet and Pumpkin puree with me, and  I am not the kind who wastes food.

Used the puree to make a colorful beet-pumkin cake. It tasted good and my Family loved it.

I involve my Daughter Delight whenever I bake a cake. I could say we bond very well over baking and she enjoys the process too. Its very therapeutic though it gets a bit messy when you work with children. Here is the recipe for the same.

Ingredients

  • Wheat flour ( I use whole wheat flour, I get it pounded ) –  1.5 cup
  • Curd (freshly prepared ) – 1/2 cup ( I warm 1 cup milk and to this I add a 1 tbsp sour curd. I leave it for 20 minutes for it to curdle.)
  • Oil – 1/3 cup
  • Lemon juice – 1 tsp
  • Beet-pumpkin puree ( both the vegetables were steamed and pureed using the hand electric blender, I wanted to taste pumpkin bits) – 1 cup
  • Soda powder – 1/2 tsp
  • Baking powder – 1 tsp
  • Salt – a inch
  • Vanilla extract – 1 tsp
  • Sugar  (  I used brown sugar  Organic Tatva) – 1/2 cup

*You can always cut down on the sugar if the beet-pumpkin puree is very sweet. The natural sugar is always better.

Method

Sieve wheat flour with salt, soda and baking powder for a couple of times. Prepare the baking tin by greasing it  with oil and wheat flour. ( I used a round tin. ) In a mixing bowl,  add the curd, sugar and lemon juice and mix well till the sugar dissolves.

Now add the beet-pumpkin puree and mix well, you get a wonderful deep raspberry color. I used a hand whisk because my daughter was the one who was mixing it.  At this point taste the mixture, for sweetness. Add some more sugar if you want to.

Add oil, vanilla extract and mix well. Once the mixture is well blended, slowly fold in the wheat flour little by little. Here use a spatula to fold in the mixture.

Add a bit of milk , if the mixture is thick.

I had pre-heated the oven at 120 degree centigrade and baked the mixture for 50 minutes.

The Power of Zero Congest

At the onset of winter, my Darling Daughter, my Husband, her Grand-mom and I were in Kerala enjoying the tropical weather. However, the visit to the tropical paradise soon came to an end.

We traveled back to Pune during the first week of January.  Here the winter was in full swing. Had to pull out the sweaters, comforters and the woolen gear to fight the wintry cold and chill.

Things did not get better at the school front for my Darling Daughter. Her school timings were changed from 8 AM to 7:45 AM and they also increased the closing time by half an hour. So the little one now has a very long day at school.

Her school is located at a quaint little village, surrounded by the hills, trees and mountains. This added to the winter woes. Its extremely cold out there . Most of the days she comes home with a running nose and this in no time led to a bad chest congestion. She was put on antibiotics for a week and things were not getting better. Once the course of the antibiotics were over, I decided no more medicines. Instead, this is what I did.

My Box of  Essential Oils

I rummaged through my collection of Essential Oils. I prepared a blend with jojoba, peppermint and eucalyptus.

Its my Darling Daughter who pointed out a small bottle of Zero Congest, lying hidden behind the other oils. Thats when  I remembered that I already have a blend with me that has lavender as well as tea tree in it.

However, I applied my concoction of homemade blend on my Darling Daughter’s chest, back and on the bridge of the nose.  When she woke up she felt better.

The Next morning before going to school I diluted the blend Zero Congest with coconut oil and applied it on her body and on her soles.

And her comment was ” I smell of Lavender and I feel better already.”

The Zero Congest blend suited her and she is much better now. I also diffused the same in my diffuser so none of us catch the cold and cough from. Psst … my home has a smell of disinfectant, now. But its OK I believe as its still winter.

And all is well in my family.

RoseHip Essential Oil – Its Amazing

Rosehip essential oil is actually extracted from the seeds of this plant and not from the rose plant. So please don’t confused with rose plant.

The reason I recently bought this lovely essential oil Rosehip is because I have black spots and acne marks on my face. I also heard  that it has anti-wrinkle and anti-aging properties.

Someone I know suggested that I use this on my face for a couple of months. For last two weeks I have been using this essential oil and I can see the acne scars gradually fading.

Fascinating features of this oil

Hey friends, I know I am back to blogging after a long long time. I was held up with personal and professional work over the last one and half months.

In between I found time to read the book

Here is my take on the book

If you ask me how the book is, I would say its Gita Simplified for the Modern Lifestyles and Times. Loved the simple language in which the book is written so the common man understands and relates with the incidents that has been mentioned in the book.
This book is an answer for those people who believe Gita and its philosophy does not work for the modern times.
The author of this book, Dr. HariHaran h,as revealed to many that Gita and its philosophy is applicable and can be applied at the current times. I appreciate his in-depth research in Gita, Upanishads and Vedanta that has culminated in a book for a common man like me. I have a Bhagavad Gita at home that I have never opened to this day.
But the verses of Gita that has been interspersed with the story of two childhood friends has been an eye-opener for me. I have decided that before I start my day, I need to at least open a page of Bhagavad gita and read a few lines.

Its a fact that initially, you may not understand anything that is written there. But gradually over the period of time, when you read and re-read, you may understand something.

This book is for those who staunchly believe spirituality is what gives you peace of mind as you age and who believe the perspective of life can change with time. Life is what one makes up. The book teaches us there is a turning point in the life of each and every human being. Some recognizes sooner, while there are other who take time to observe and realize that, and many perish without understanding that at all.

Hats off to the Author to creating a book that brings out the various emotions of the reader . Go ahead and read to know the story of two good childhood friends and how fate and destiny have fun at their expense
